
I’M SO SORRY! I really don’t know why it’s taken me so long to share this sugar free tiramisu recipe with ya’ll. Especially since its one that I’m so proud of!
I came up with this recipe in 2020 when I had my keto baking business and it was one of, if not THE most popular item on the menu!
There were people ordering this thing multiple times a week. So I’m not the only one in love with it. This recipe was tested and retested until I came up with something that was truly restaurant quality without the sugar.
Crisp homemade ladyfingers, creamy mascarpone, and the intoxicating aroma of dark coffee running throughout.
This tiramisu isn’t just “good for being sugar free” its good PERIOD
Ingredients Needed For Sugar Free Tiramisu
Almond Flour – Adds a subtle nutty flavor to our ladyfingers and keeps the carb count low
Coconut Flour – Coconut Flour is super absorbent. This is going to help dry out our ladyfingers so they can hold more coffee! More coffee = Better tiramisu
Protein Powder (Whey Isolate) – The protein powder helps the cookies maintain their shape and gives the ladyfingers a better flavor
Cinnamon – Just a pinch gives a nice flavor to our homemade ladyfingers
Baking Powder – To help our ladyfingers rise when baked
Kosher Salt – enhances the flavors
Egg Whites – The meringue base for our ladyfingers will help the cookies maintain their shape within the tiramisu
Egg Yolks – Add a lovely rich flavor to our mascarpone cream, similar to French vanilla ice cream!
Powdered Monk Fruit – We want a powdered monk fruit sweetener for our cream because it will dissolve much better than granulated
Lakanto Baking Sweetener – This is my favorite sugar free sweetener for making meringue! I highly recommend using if you can find it
Mascarpone – This is the delicious creamy cheese used in tiramisu
Heavy Cream – Helps lighten the mascarpone cream
Vanilla Extract – adds a lovely vanilla flavor to the cream and homemade ladyfingers
Dutch Cocoa – Tiramisu just isn’t tiramisu without a generous dusting of unsweetened cocoa
Instant Espresso – This is optional but it adds an extra kick to the cocoa powder
Coffee / Espresso (Chilled) – For soaking the ladyfingers

Tips For Making Sugar Free Tiramisu
The Lady Fingers
Use the recommended sweetener. I prefer the Lakanto brand baking sweetener (in a purple bag). It has a similar sweetness level to sugar and dissolves nicely. I prefer this over the powdered monk fruit because you can use more without it being overly sweet. You also get more cookies out of the recipe this way due to more volume
Piping Tip – Make sure you use a round piping tip to make these cookies. I used a Wilton #1A tip Without a piping tip your cookies will have no shape. They’ll still taste good though!
Soaking The Ladyfingers – Don’t be afraid to REALLY soak your ladyfingers. They can hold more coffee than you think. I suggest test soaking 1 or two and tasting them to see how long they need.
I soak between 25-30 seconds each!

Sabayon (Hot egg yolk mixture) – Make sure to gently heat your egg yolks and powdered sweetener over a double boiler so the eggs don’t scramble.
Whisk the yolks until they’re thicker and pale in color. I cook mine until the eggs feel pretty hot, then finish whisking them off the heat until thickened
Allow the Sabayon (Egg yolk mixture) to cool a bit before mixing with mascarpone. Warm to the touch is fine but it should NOT be hot when you add it to the mascarpone!

Coffee / Espresso – Make sure your coffee or espresso is chilled before dunking the ladyfingers. If its too hot the ladyfingers will start to dissolve
Assembling Tiramisu (Sugar Free)
8×8 Baking Dish – The perfect size for a tiramisu but if you want a taller one assemble in a loaf pan instead
First Layer – Soak ladyfingers and place on bottom of baking dish. I can fit 8-10
Second Layer – Half the mascarpone cream
Third Layer – Dust with cocoa.
REPEAT!
Ladyfingers – I can usually fit more on the second layer
Mascarpone Cream – add remaining half of cream
Cocoa – Dust the top generously with cocoa.
Wrap and Chill tiramisu in the fridge for 4 hours, or overnight

Sugar Free Tiramisu F.A.Q.
Where can I buy Lakanto baking sweetener? You can find it in the baking section at your local sprouts. You may also find it in the specialty foods section at discount stores like Marshalls and TJ Maxx
Can I use cream cheese instead of mascarpone? I don’t recommend subbing cream cheese for mascarpone. Your tiramisu will end up too thick and tangy instead of lightly creamy and custard like.
Where can I find mascarpone? You can find mascarpone in the specialty cheese section of the grocery store. Usually near the deli area
How to store tiramisu? You want to store tiramisu in the fridge either wrapped in plastic or covered with a tight fitting lid.
Can tiramisu be frozen? Surprisingly tiramisu freezes very well! Just make sure to freeze it in individual portions in covered containers.
What should I do with the extra ladyfingers? I like to freeze them and keep them on hand for my next tiramisu!
How should I use the extra egg whites? You can add the extra egg whites to your omelets or freeze them for other baking projects.

- 2 Bowls
- Double boiler (a pot filled with 1/2 inch of water + Heat Proof Bowl on top)
- Whisk
- Rubber Spatula
- Piping Bag
- Round Piping Tip (Wilton #1A)
- Sheet Pan
- Parchment Paper
Ingredients
Lady Fingers
- 1/4 Cup Almond Flour (25g)
- 1/4 Cup Coconut Flour (25g)
- 1/3 Cup Whey Protein Isolate *Unsweetened (25g)
- 1/2 tsp Cinnamon
- 1/4 tsp Baking Powder
- 1/8 tsp Kosher Salt
- 3 ea. Egg Whites
- 1 ea. Egg Yolk
- 1 tsp Vanilla extract
Mascarpone Cream
- 1 Cup Heavy Cream
- 2 8oz Mascarpone
- 5 ea. Egg Yolks
- Powdered Monk fruit (125g)
- 1/2 Tbsp Water
- 2 tsp Vanilla Extract
Assemble Tiramisu
- 3/4 Cup Strong Coffee / Espresso (Chilled)
- 1 Tbsp Dark Rum / Marsala Wine
- 2 Tbsp Cocoa Powder (14g)
- 16-20 ea. Lady Fingers
Instructions
Lady Fingers
- In a small bowl combine dry ingredients (sift if needed). Set aside
- Separate 3 egg whites and add to a heatproof bowl. Set one yolk aside for ladyfingers and save extras yolks for tiramisu
- Add Lakanto baking sweetener to egg whites and place over a double boiler. Whisk constantly until sweetener dissolves
- Once dissolved, remove bowl from heat and whisk with an electric mixer until egg whites reach stiff peaks
- Add egg yolk, vanilla, and salt. Mix quickly until just combined
- Add half the dry ingredients. Fold in to egg white mixture.
- Add remaining half of dry ingredients and fold into the egg white mixture.
- Immediately pour batter into a piping bag fitted with a round tip *See Note
- Pipe lady fingers onto a parchment lined baking sheet
- Bake 330℉ For 10-12 minutes Or until edges are golden and ladyfingers feel dry to the touch
- Cool completely before removing from parchment paper
- I like to make my ladyfingers the night before and assemble the tiramisu the next day
Mascarpone Cream
- Whisk heavy cream to stiff peaks. Put in the fridge.
- In a large bowl add mascarpone cheese. Set aside
- Add egg yolks, water, and powdered monk fruit to a separate heat proof bowl.
- Place over a double boiler and whisk constantly. Make sure the water stays at a light simmer NOT a boil
- When egg yolks feel very warm (almost hot) to the touch remove from heat. Keep whisking until they become thick and pale in color.
- Add vanilla and whisk until thick again.
- Add egg yolk mixture to mascarpone in 3 additions (be careful not to scrape any overcooked egg off the side of the bowl into mascarpone mixture)
- Gently fold whipped cream into mascarpone
Assembling The Tiramisu
- Add chilled coffee to a bowl
- Dip each lady finger in coffee (for 20-30 seconds)
- Place lady fingers on the bottom of an 8×8 baking dish
- Pour half the mascarpone cream over the first layer of lady fingers
- Dust the mascarpone with Dutch cocoa
- Repeat with second half of lady fingers and mascarpone
- After dusting with cocoa, cover tiramisu with a tight fitting lid or plastic wrap
- Chill 4 hours before serving (overnight is best)
