Almond Croissants (Low Carb and Sugar Free!)

Ingredients

  • 1 Stick Unsalted Butter (113g)
  • 1/3 Cup Granulated Monk Fruit Sweetener (70g)
  • 1 ea. Egg
  • 1 1/4 Cup Almond Flour (125g)
  • 3 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 1/4 tsp Fine Sea Salt
  • 4 Sheets Cut Da Carb (Cut into 4 pieces)

Instructions

  • In a dry pan gently toast almond flour. It should be 2-3 shades darker than you started with. Just go low and slow while stirring frequently
  • Add toasted almond flour and set aside to cool
  • In a large bowl add 1 stick softened butter and granulated monk fruit.
    Whip with a hand mixer until light and fluffy
  • Add a room temperature egg and mix until combined
  • Add the toasted almond flour, vanilla, and almond extract, and salt
  • Whip with hand mixer until thick and fluffy like a cake batter
  • Add the almond mixture to a piping bag and assemble the croissants
  • Roll croissants, then top with extra almond cream and sliced almonds
  • Bake 350F (180C)
    12-15 minutes or until golden brown and crispy
  • Cool for 5 minutes before dusting with powdered sugar or allulose
