Instructions
In a dry pan gently toast almond flour. It should be 2-3 shades darker than you started with. Just go low and slow while stirring frequently
Add toasted almond flour and set aside to cool
In a large bowl add 1 stick softened butter and granulated monk fruit.
Whip with a hand mixer until light and fluffy
Add a room temperature egg and mix until combined
Add the toasted almond flour, vanilla, and almond extract, and salt
Whip with hand mixer until thick and fluffy like a cake batter
Add the almond mixture to a piping bag and assemble the croissants
Roll croissants, then top with extra almond cream and sliced almonds
Bake 350F (180C)
12-15 minutes or until golden brown and crispy
Cool for 5 minutes before dusting with powdered sugar or allulose
