
These low carb almond croissants are easy to make and will have your whole house smelling like a low carb French bakery!
You don’t need any special equipment to make them and they come together super quick. You’ll need a few basic low carb ingredients that you probably have in your pantry, and some flat breads
Just make sure to plan ahead because the main ingredient needed for these croissants can only be purchased online.
What Are Almond Croissants?
Almond croissants are regular buttery croissants that have been filled with a fragrant almond cream (or frangipane) then baked until the outside is beautifully crisp.
They’re extra decadent and delicious when topped with extra almond cream, sliced almonds, and a light dusting of powdered sugar!
Ingredients Needed For These: Low Carb Almond Croissants
Almond Flour – These are almond croissants after all! This makes up the base of our creamy almond filling
Salt – To enhance the flavor of our sweet filling
Cut Da Carb Flatbreads – This is going to act as our “croissant” to keep this recipe low carb
They can only be purchased online. You can find them here
Unsalted Butter – Salted will also work just cut down on the salt added to the recipe
Granulated Monk Fruit Sweetener – To sweeten our croissants without any sugar.
Your favorite monk fruit and erythritol blend will work for this recipe
Egg – Helps bind our filling so it firms up as it bakes. Just make sure it’s room temperature so it combines seamlessly with the other ingredients
Vanilla Extract – A touch of vanilla makes any baked good that much better
Almond Extract – This enhances the almond flavor of the filling. It is super strong so make sure to measure carefully!
Egg Yolk – For sealing the croissants
Egg Wash – Brushed on before baking for a crispy golden exterior

Cut Da Carb Flatbreads can only be ordered online directly from their website, but don’t fret!
They’re extremely versatile and can be used to not only make desserts like these low carb almond croissants, but they’re fabulous for savory recipes too!
Quesadillas, burritos, pizzas you name it. The extra flat breads will be put to good use!
Do The Croissants Reheat Well?
The texture of the almond croissants isn’t as good the next day (even if air fried)
So I recommend freezing any extra croissants and baking as needed
Tips For The Best Low Carb Almond Croissants
Don’t swap the Cut Da Carb flatbreads I know it may be tempting to pick up another brand of low carb flatbreads from the store but this recipe works the best with these flatbreads
They’re the thinnest ones I’ve found on the market, which makes them perfect for mimicking delicate layers of flakey pastry.
Seal The Croissants With Egg Yolk Once you roll your croissants the last thing you want is for them to unravel in the oven as they bake.
For that reason I suggest sealing the edges with egg yolk.
Its stickier than egg wash and will keep all of the delicious almond filling inside where it belongs!
Toast The Almond Flour!
It may be quicker to just dump all of the ingredients in a bowl and mix, but taking a few extra minutes to toast the almond flour changes the game
I tried both toasted and untoasted almond flour for this recipe and the difference was night and day
The toasted filling develops this lovely nutty aroma that the untoasted flour just can’t compete with
Its no different than eating roasted peanuts vs raw peanuts. Roasted just has more flavor!


Assembling The Almond Croissants
Take 4 sheet of cut da carb flatbreads and divide each sheet into 4 equal pieces
You’ll need two 1/4 sheets of flatbread for each croissant

Pipe the almond filling on the first sheet of flatbread

***Make sure to leave a half inch without filling so you can brush on the egg yolk
Stack the second 1/4 sheet on top of the first layer.

Egg wash the front edge and pipe on the second layer of filling
Roll the croissant, being careful not to push down on the filling

Place the croissants seam side down on a parchment lined sheet and top each one with more almond filling, and sliced almonds

Brush croissants with egg wash (one beaten egg)
Bake on 350F for 12-15 minutes or until lightly browned and puffed up
Allow the croissants to cool for 5 minutes before dusting with powdered sugar
Powdered “Sugar” For Dusting

Since this recipe has very little carbs I don’t mind dusting my almond croissants with actual powdered sugar.
But if you want to keep these completely low carb I highly recommend powdered allulose
It taste’s very similar to sugar and it doesn’t have a cooling effect like monk fruit sweetener.
Just put the allulose in in a coffee / spice grinder and blitz away until its nice and powdery!
Can I Freeze The Almond Croissants?
The frozen Trader Joe’s Almond Croissants were a big inspiration for my recipe so of course I had to see if you could freeze my low carb version!
I tested it, and any unbaked croissants can be frozen in an airtight container and baked fresh when you want them
Just remember to completely thaw and egg wash them before baking!
What Makes These Almond Croissants PCOS Friendly?
For my insulin resistant PCOS girlies this recipe is lower in carbs and sugar than a croissant you’d find at a bakery. That means you can enjoy it any time of day without worrying about spiking your blood sugar to the moon.
Its also a delicious substitute for when you want to have a croissant more often,
buuuuuuut that doesn’t mean regular croissants are off limits!
If you’re going to enjoy yourself and have a bakery made pastry just make sure to follow these tips to keep your blood sugar in check.
I’m all about balance, and having regular sugar filled desserts every now and then is okay!
Almond Croissants (Low Carb and Sugar Free!)
Ingredients
- 1 Stick Unsalted Butter (113g)
- 1/3 Cup Granulated Monk Fruit Sweetener (70g)
- 1 ea. Egg
- 1 1/4 Cup Almond Flour (125g)
- 3 tsp Vanilla Extract
- 1/2 tsp Almond Extract
- 1/4 tsp Fine Sea Salt
- 4 Sheets Cut Da Carb (Cut into 4 pieces)
Instructions
- In a dry pan gently toast almond flour. It should be 2-3 shades darker than you started with. Just go low and slow while stirring frequently
- Add toasted almond flour and set aside to cool
- In a large bowl add 1 stick softened butter and granulated monk fruit. Whip with a hand mixer until light and fluffy
- Add a room temperature egg and mix until combined
- Add the toasted almond flour, vanilla, and almond extract, and salt
- Whip with hand mixer until thick and fluffy like a cake batter
- Add the almond mixture to a piping bag and assemble the croissants
- Roll croissants, then top with extra almond cream and sliced almonds
- Bake 350F (180C)12-15 minutes or until golden brown and crispy
- Cool for 5 minutes before dusting with powdered sugar or allulose
