Ingredients

  • 1 Cup Frozen Strawberries (140g)
  • 1/4 Cup Frozen Wild Blueberries (35g)
  • 3 Tbsp Allulose (45g)
  • 1 Tbsp Granulated Monk Fruit Sweetener (15g)
  • Pinch Kosher Salt
  • 1/4 tsp Fresh Lemon Juice
  • 1/8 tsp Vanilla Extract (Optional)
  • 2 tsp Finely Ground Chia Seeds (6g)

Instructions

  • Add frozen berries, allulose, and pinch of salt to a medium sized sauce pot
  • Cover with a tight fitting lid and place over medium low heat for 5 minutes
  • Turn off heat and mash berries
  • Return pot to the heat and cover. Cook for another 5 minutes or until berries are extra soft
  • Remove from heat and mash again (if you want a chunky jam you can skip the second mash)
  • Stir in chia powder, lemon juice, and vanilla
  • Enjoy immediately or chill for an hour to thicken
  • Enjoy your homemade chia jam :)

Notes

Don't skip the tight fitting lid! This is going to keep the juices from evaporating so you
  1. End up with more jam
  2. Don't concentrate the naturally occurring sugars in the fruit
