Pumpkin Pie Latte (“Sugar” Free / Low Carb)

I LOOOOOOOOVE a good iced beverage and this Pumpkin Pie Latte? Its a banger! Some may even say its better than the Starbucks pumpkin spice latte….

Seriously its got ACTUAL PUMPKIN, fall spices like cinnamon, nutmeg, and allspice. AND its low in sugar? It’s a low carb and PCOS dream come true!

Ingredients For This Sugar Free Pumpkin Pie Latte

Canned Pumpkin Puree – Use a brand you like and make sure the only ingredient is 100% pumpkin. If there’s sugar or spices you’ve probably grabbed pumpkin pie FILLING so double check before leaving the store!

Brown Sugar Substitute – The best pumpkin pie has brown sugar so using a sugar free substitute will get you a similar flavor without the extra carbs. You can buy this in stores or use my Homemade Brown ” Sugar” recipe.

Sweetener – I use a combination of granulated monk fruit and allulose for this sugar free pumpkin pie latte. I find this pairing gives me the perfect sweetness with no cooling effect

Pumpkin Pie Spice – This contains all of the fall spices you need for pumpkin pie so I just buy it premade. If you have a homemade version you really love use that instead. You want this pumpkin pie latte to be perfect for YOU

Fresh Nutmeg – Even though there’s nutmeg in the pumpkin spice I like to add a little freshly grated nutmeg to make it extra special. It smells and tastes delightful, plus one little nutmeg will last you a year!

Turmeric – This is completely optional but I like to add a little to bump up the color. Just keep in mind if you add too much your sugar free pumpkin latte will look more yellow than orange.

Heavy Cream – I treat this like a pumpkin creamer so I prefer to use heavy cream to make it extra rich. If dairy doesn’t agree with you or it increases your PCOS symptoms opt for a dairy free option instead.

I highly recommend homemade cashew milk! Its SUPER CREAMY and has a neutral flavor profile.

Full fat canned coconut milk would be great too if you don’t mind the coconut flavor in your latte!

Vanilla – Any great pumpkin pie has vanilla so of course we’re adding a splash to our low carb pumpkin pie latte

Kosher Salt – Never underestimate the power of salt in your sweets! Even a small pinch will enhance the already delicious flavors in your pumpkin pie latte.

Almond Milk – The pumpkin cream is super rich so I like to finish off my latte with unsweetened almond milk. Feel free to use you’re favorite dairy free option or low carb milk of choice instead!

Tips For Making This Sugar Free Pumpkin Pie Latte

Cook The Pumpkin – You’re probably wondering why you can’t just add all of the ingredients to a bowl and mix. And while it may be easier it simply WON’T taste as good.

Combining the pumpkin, spices, and sugar free sweeteners as you heat them is going to bring out the flavors and get rid of any tinny canned pumpkin flavor.

Use a good pumpkin pie spice – Most of the flavor in this sugar free pumpkin pie latte is going to come from the pumpkin spice so make sure you choose one you LOVE.

Different brands have different amounts of each spice which is going to determine how much YOU enjoy it. I’ve tried some that are way too heavy on the ginger and its ruined the taste of recipes I normally enjoy

Espresso – I haven’t mastered espresso making in my home kitchen (and you probably haven’t either) so I highly recommend just buying a shot of espresso from your local coffee spot.

Mine makes theirs super strong so I can actually make 2 drinks with only one shot of espresso!

Caffeine Free – If you’re not a coffee person but you still want to try this pumpkin pie latte swap the espresso for a scoop of protein powder!

I only suggest doing this if you reeeeally love the brand you’re using otherwise it will overpower the taste of pumpkin pie. But it can be a fun way to get you’re protein in which is super important when you have PCOS!

How To Assemble Your Sugar Free Pumpkin Pie Latte

I treat this pumpkin cream like coffee creamer and recommend playing with the ratio you enjoy most! If you prefer sweeter drinks you may want more pumpkin cream and less milk.

For a less sweet latte you’ll want less pumpkin cream and more milk

Here’s what I personally do as someone who prefers sweeter drinks:

Pumpkin Cream – 1/2 C

Espresso – 1 Tablespoon

Almond Milk – 1/3 C

  1. Add espresso and pumpkin cream to the bottom of a glass
  2. Add crushed ice
  3. Pour over your milk of choice
  4. The pumpkin cream is THICK so give all of this a GOOD STIR before you add your whipped cream!
  5. Top with more pumpkin spice, your favorite sugar free caramel, and enjoy!

Ingredients

Pumpkin Cream

  • 1/2 C Pumpkin Puree (120g)
  • 1/4 C Brown "Sugar" Substitute (50g)
  • 1 Tbsp Granulated Monk Fruit (15g)
  • 1 Tbsp Allulose (13g)
  • 1 1/2 tsp Pumpkin Pie Spice
  • Pinch Fresh Nutmeg
  • 1/8 tsp Kosher Salt

Pumpkin Pie Latte ("Sugar" Free / Low Carb)

  • 1 Shot Espresso
  • 1/4-1/2 C Pumpkin Cream
  • 1/3 C Almond Milk
  • Ice

Instructions

Making The Pumpkin Cream

  • Add pumpkin, spices, sweeteners, and salt to a pan
  • Cook gently over medium heat while stirring with a silicone spatula
  • When the sweeteners are dissolved and the mixture produces a bubble or two its done
  • Remove pan from and stir in vanilla and heavy cream
  • Use immediately or store in the fridge
  • Enjoy!
